Veggies Tales: Week 1

So the new year is here and I have been without meat for 3 days. So far I’ve been good (expect every time I see a commercial for a hamburger.lol). I do find that now, even after I eat a meal, I get hungry extremely fast (sometimes 30-45mins after a meal). So this extreme hunger has led to extreme snacking. Not the chips and cookies that I truly desire but healthy snacks. Lots of fruits and nuts between meals.  A typical day for me (food wise) now is oatmeal and a banana for breakfast. Between breakfast and lunch I’ll have an orange and pistachio nuts. For lunch I’ll have miso soup and a fruit salad and as for dinner it changes day to day.

Today I made my first vegetarian entrée, chili!!!!! I used a recipe found here. Some vegetarian recipe completely omitted meat, this one however substitutes ground beef with a vegetarian burger crumbles…… I know it sounds kinda sketchy, right? But don’t let the fear of unfamiliarity scare you away. It was really good!!! A little too spicy for me liking but delicious none the less. And this meal left me completely full. I served over rice and side of cornbread. I what you’re thinking, “It’s delicious, that’s fine and dandy. But where’s the protein?” Don’t worry the protein was in full supply with three beans( kidney, garbanzo, and black) and the vegetarian burger crumble are made from soy protein, so all bases are covered. I look forward to making this again during the winter.
