Veggies Tales; Week 5

It’s been a whole month!!! Wow, time is flying. Most of  family and friends are supporting me on this journey. There still are those few that can’t imagine life without meat, but shrugs what can you do. My mom is super supportive(as most moms are) making sure I’m eating the right foods for proper nourishments and vitamins. My dad on the other hand, can’t seem to get right! He’s always offering me chicken, as if I didn’t remind him 20 minutes prior that “I don’t eat that, dad!” in the sternest voice I could muster. A lot of family members are asking me if my new diet as affected my weight. And surprisingly it hasn’t. I haven’t gained any extra ‘holiday weight’ but I haven’t lost any weight. Which means unfortunately I'll actually have to workout to get bikini ready for the spring.lol

Unfortunately I’ve fallen back into an old habit of not eating as often as I should. I wake up with my mind running, so when I finally settle down it’s 5 hours later and I still haven’t eaten. Another reason I eat only about two meals a day is I’m lazy. I know, I know it’s really bad and I’m a horrible person but hear me out. It’s just too much work, to cook every night. (that sounds terrible, huh?lol) I’ve realized that when it comes to food people are either cooks or bakers and I’m definitely a baker.


But lucky I’ve found an easy shrimp recipe, that makes the idea of cooking dinner a lot less worrisome.lol. I found the recipe here. And the best thing about this recipe is I already had to the ingredients to make it! And if that wasn’t a good enough reason to make this dish than consider this, you don’t have to peel the shrimp!! Perfect to snack on during the superbowl #winning


I served mines over rice with edamame
1 pound (shell-on)
1/4 tsp black pepper
3/4 tsp salt
1 tbsp ketchup
1 tbsp brown sugar
1 tbsp lemon juice
1 tbsp vegetable oil
1 tsp chili powder
1 tsp cumin
1/4 tsp allspice
1/4 tsp cayenne pepper



  1. Rinse and drain shrimp well. Combine with all ingredients in a mixing bowl, and toss until the sugar is dissolved and the shrimp are coated. Cover and let sit for 15 minutes in the fridge.
  2. Preheat a skillet on medium-high flame until hot. Add the shrimp and sear for 3 minutes, until cooked. The shells will get charred, and browned, but the meat inside will not, so don’t worry the outside getting too dark- they should look like they were grilled over coals. Removee to a plate, and when cool enough to handle.
