
1. Marinate you choice of fish. I like using tilapia, it has become my favorite fish of these two years.
2. While your fish is marinating, wash and cut your veggies. Once again you can chose which vegetables you want. This time I used onions, mushrooms, green peppers, red peppers, and carrots. Before I've used, squash, cucumber, and even spinach.
3. After you finish marinating the fish, place foil on cookie sheet (this time I used a square pan). Then place fish on the foil(along with marinate) and season. Add veggies on top of fish.
4. Fold foil over so the that the veggies are not seen at all. Bake for 25 minutes at 375 degrees. I like to serve this over rice or quinoa. Happy eating!!!
